Recipe for a Modern Vinaigrette

I prefer more acid and less oil than the classic vinaigrettes. Here is my recipe for a great winter salad:

• Zest of 1 Meyer lemon

• 1 small shallot

• 3 tablespoons of lemon juice

• 5 tablespoons of good quality olive oil

• Pinch of salt

• 1/2 teaspoon of maple syrup
